We grow Hardneck garlic varieties: this type of garlic produces a central flowering stalk commonly called scapes. Garlic flowers or stems from May to June depending on your region.
The most common practice is to remove the scape and eat it, as it is considered a great culinary garlic delicacy. A fresh “green” tasting blend of onion & mild garlic. Hardneck cultivars include some of the world’s finest-tasting garlic with a diverse range of characteristics.
Softneck garlic, commonly “massed produced”, and exported by China, does not produce a flowering stalk or scape and doesn’t possess the complex flavour palette of the hardnecks.
